Does anyone else struggle with coming up with quick and easy meals on the fly? Well, most of us know firsthand how, after a busy workday or a weekend chock full of errands and chores, it can be difficult to find the motivation to also whip up lunch or dinner, too. All too often, the convenience of fast-food options on every corner may seem like a nice and easy solution but those extra splurges can add up quickly! We recognize those quick grabs can’t always be avoided but one way to reduce the temptation of unnecessary spending is to plan and prep ahead. However, to do this and be successful at it not only takes commitment but also requires establishing a routine; with a plan, we become committed and build a routine and with a routine, it becomes a groove and easier to maintain.So, over the weekend we stocked up on easy meal and snack reusable prep containers, cleaned the fridge, washed and put the dishes away, prepped the kitchen, and began brainstorming and paging through recipes for tasty/healthy meals and snacks at home that didn’t break the bank. First, this started with creating a list of ingredients we already had at home. The list was broken out into categories:
Produce
Meat
Dairy
Legumes
Etc.
And then into subcategories such as:
Salmon
Boneless skinless chicken breast
Orzo
Whole wheat pasta
Black beans
Broccoli
Onion
Next, we made a list of ingredients we wanted to pick up from the store:
Ricotta
Bananas
Coffee creamer
Milk
Hummus
Carrots
Etc.
And made a grocery run on Sunday. Then, we whipped up a quick meal that was ready to go for the start of the week. On Monday, we plan to toss a few items in the Instapot (we love using it for quick and easy chicken breast) and prepare a few of the meal ideas we’ve selected to get us through the majority of the work week.
