There’s A Recipe For That!

July 6, 2022 What is it about not being able to do something, that makes you want to do it even more? We’re still in the early stages of fighting off temptations that have become part of our “normal” daily routine (i.e., Starbucks coffee mornings and quick lunch or dinners on the go), and working to stay within our goal to decrease the amount of money we are spending on food and drinks, especially outside the home. 
This past week we both had a craving for this delicious curry chicken wrap that Colectivo Coffee serves.  Instead of hopping in our car and driving to our favorite location, we instead decided to save some gas, food budget money and use the items we already had in our house to try to make it ourselves. To assist with making the curry chicken salad, I looked at the ingredients listed on Colectivo’s website and a few different websites to come up the following recipe:
 
Curry Chicken Salad
  • Rotisserie Chicken – shredded in bowl
  • 1/3 cup mayo
  • 2 stalks celery – diced
  • ¼ red onion – minced
  • ½ cup craisins
  • ¼ slivered almonds (cashews or pecans could also be used)
  • ½ lemon, juiced
  • 1 tsp freshly chopped parsley (optional)
  • ½ tsp turmeric
  • ¼ tsp pepper
  • ½ - 1 TBSP (I like the curry flavor strong, but if you aren’t sure, start light and continue to add)
