We Interrupt This Week’s Scheduled Blog Post…

September 21, 2022 … With a much-requested recipe!You may remember the quote, “The best laid plans of mice and men often go awry” from when reading Of Mice and Men in High School. How true that is; no matter how much you plan, things sometimes just don’t always go as you wish. Not going to lie – that’s where we were this week; to say it has been “chaotic” would be an understatement. With that, we need to shift gears from the blog post we wanted to do on High Yield Savings accounts, as it is an important topic that we feel just shouldn’t be quickly “thrown together”. If we have learned anything from this Project Money journey thus far, it has been to stay consistent and keep at it. So, while this blog post is unplanned, ever since we posted about the Fire Roasted Hatch Pepper Jelly Krystal made a few weeks ago, we have been getting messages asking for the recipe and we are happy to share! The recipe used for the jam itself was this one:

But, to keep the jam longer than a month, she water baths them and follows that process in this recipe:

The roasting of the peppers she did on our gas stove, but as it can be a bit messy, she wants to try it outside on a grill next year.
TIP:  If you do not like things so spicy, be sure to scrape out at least half the seeds from the peppers. 
We bought our canning items when “canning” was one of THE activities of 2020, so while we didn’t save money initially, the nice thing is, once you have the jars, you just need to buy new lids each year; they are fairly cheap. Also, if you have a bit of time to look, you can usually find the jars at garage sales and/or thrifts stores for a cheap price. 
While we enjoy eating the items, we can ourselves, we also love making unique treats, like this pepper jelly, to share with friends and family during special occasions.
