Of all the things I like to plan, my meals are not one of them. I never know what I want to eat and if I’m not in the mood for what I’ve prepped, eating isn’t fun. I’ve also never been great at cooking for only one person and the idea of eating the same, or a similar, meal all week sounds boring to me. Plus, by the end of the week aren’t the meals getting a little sus on the storage end?I’ve been trying to figure out what the best way around this issue was. I started trying to think through a few different things: What do I have on hand? What do I like to eat? What is quick and easy? I’ve managed not to kill all my vegetable plants this year, so I have cucumbers, zucchini, and tomatoes coming out of my ears. I like all those veggies, plus they’re easy to use, and are easier to make single portions. I then also sourced my friends for what are different quick meals I can make with these. I came up with some marinated cucumbers, panzanella, and zucchini bread. Not an overly planned week, but enough that I would have something quick to grab when I was too lazy to cook or a light and easy lunch. And I wasn’t drowning in leftovers.I also stick with staples like overnight oats that I can change up pretty easily, different varieties of yogurt, and lots of snacks. I’m a summer girl at heart but I’m also looking forward to the weather cooling down since soup season is always a great go to for dinners when it’s cold.
